Ingredients
- 4 large bell peppers (any color)
- 1 lb ground beef
- 1 cup cooked rice
- 1 can (14oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella
- Salt and pepper

Prepare Peppers
Cut tops off peppers and remove seeds. Boil in salted water for 5 minutes. Drain.

Make Filling
Brown beef with onion and garlic. Drain fat. Stir in rice, tomatoes, Italian seasoning, salt, and pepper.

Stuff & Bake
Fill peppers with beef mixture. Place in baking dish. Cover with foil and bake at 375°F for 30 minutes.

Add Cheese
Uncover, top with cheese, and bake 10 more minutes until melted.
