Ingredients

  • 1 lb dried split peas, rinsed
  • 1 ham bone or 2 cups diced ham
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme

Instructions

Sauté Vegetables

In a large pot, sauté onion, carrots, and celery for 5 minutes until softened.

Add split peas, ham bone (or diced ham), garlic, broth, bay leaves, and thyme. Bring to a boil.

Reduce heat and simmer for 1-1.5 hours, stirring occasionally, until peas are very soft and soup is thick.

Remove ham bone and bay leaves. Shred any meat from bone and return to soup. Season to taste.
