Ingredients
- 2 lbs beef chuck, cut into 2-inch cubes
- 4 carrots, cut into chunks
- 3 potatoes, cubed
- 1 onion, chopped
- 3 cups low-sodium beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- 2 tbsp flour

Toss beef cubes with flour, salt, and pepper. Place in slow cooker with carrots, potatoes, and onion.

Stir in broth, tomato paste, thyme, and bay leaves.

Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until beef is fork-tender.
