- 1.5 cups dried green or brown lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 can (14oz) diced tomatoes
- 2 cups spinach
- 1 tsp cumin
- 1 tbsp olive oil
