Ingredients

  • 1.5 cups dried green or brown lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14oz) diced tomatoes
  • 2 cups spinach
  • 1 tsp cumin
  • 1 tbsp olive oil

Instructions
