- 1 tbsp olive oil
- 1 lb chicken breast, diced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 onion, chopped
- 6 cups low-sodium chicken broth
- 2 cups wide egg noodles
- 1/2 tsp dried thyme
- Fresh parsley, chopped
