- 2 cups cooked chicken, diced
- 1 package refrigerated pie crusts (2 crusts)
- 3 tbsp butter
- 1 onion, diced
- 2 carrots, diced
- 1 cup frozen peas
- 1/3 cup flour
- 2 cups chicken broth
- 1 cup milk
- 1 tsp dried thyme

In a large skillet, melt butter. Sauté onion and carrots for 5 minutes. Sprinkle flour over vegetables and stir for 1 minute.

Slowly add broth and milk, stirring constantly. Bring to a simmer until thickened. Stir in chicken, peas, thyme, salt, and pepper.

Line a 9-inch pie dish with one crust. Pour filling in. Top with second crust, crimp edges, and cut slits for steam.
