- 1 lb beef stew meat, cubed
- 1 cup pearl barley
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 8 cups low-sodium beef broth
- 2 bay leaves
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper

Instructions

Brown Beef
Heat oil in a large pot. Brown beef on all sides. Remove and set aside.

Sauté Vegetables
In the same pot, sauté carrots, celery, and onion for 5 minutes.

Simmer
Return beef to pot. Add barley, broth, bay leaves, and thyme. Bring to a boil, then simmer for 1.5 hours until beef and barley are tender.

Remove bay leaves. Season with salt and pepper to taste.
